If you love mac and cheese and are looking for a fairly hands-off approach to making it, this macaroni and cheese hack for 2 is for you. It’s so creamy, so cheesy, and so easy with virtually no prep. The oven does most of the work, so you don’t have to!
You don’t need my advice, but I made this for the first time today — I used the calculator in the recipe to triple it, and I do think the quantities were incorrect. It called for six cups of milk, but I think five would have been more than enough. It was so soupy I was concerned I couldn’t put it on the Easter table, but as I prepared other food, it did thicken enough to serve. So next time, one less cup of milk or the full 16 oz box of pasta.
That said, this was delicious and it’s going in my rotation. I used orecchiette, with whole milk, Velveeta, cream cheese and Colby. Stellar choices, but I should have added more salt. Totally my bad. I will add more salt and probably also mustard next time. Four stars only because of the recipe calculator. Otherwise, this is a real winner.
I'm a big eater, a huge fan of pasta (and mac n cheese), and I'm on a mission to prove that indulgence and balance can exist well together without silly restrictions or dieting. Life's too short to eat bad food!
