🏆 The Good :
I’m a huge fan of cannoli, and I especially love when the time is taken to make them fresh. At Bar Americano, they are doing theirs semi-homemade. They are not making their own cannoli shells, they order them in, but they do make their own fresh ricotta cheese for the filling. That being said, the shell is crunchy, somewhat flaky and buttery, and the fresh ricotta filling is very smooth. I really like the crunch and saltiness that the chopped pistachio brings to the table, and overall, this dessert is not too sweet. I also thought the slightly fruity olive oil was a nice addition, adding to the more savory feel of these cannoli.
🚫 The Not-so-good :
The ricotta cheese was a little tart for me, which I’d imagine comes from the amount of acid they choose to use in making the ricotta from scratch. So, for me, the cannoli were a little off balance. I think actually a touch more sweetness could have rounded out the flavors a bit better, seeing as there are so many salty/savory elements to this dish already. Also, and this is purely personal preference, but I actually like a bit more texture to my ricotta cheese. This ricotta is really, really smooth. If you like that mouth-feel with ricotta, then you’ll love this.
