Big Mac and Cheese Burger

Is your mouth completely watering since you saw my mac and cheese burger on Food Network’s show Guy’s Big Project? Well drool no more, because I’ve got the recipe, and I’m giving it to you, so you can make it for all your friends and fam. You’re about to be really, really popular… just sayin’. Alright, without further ado, here’s the recipe for the goodness!

Big Mac and Cheese

  1. 1 1/5 lb ground chuck
  2. 8 slices white American cheese
  3. 4 Kaiser rolls, uncut.
  4. 1 lb small shells pasta
  5. 1 10.5 oz log goat cheese
  6. 1 c freshly grated fontina
  7. 1 c freshly grated parmesan
  8. 1/2 stick salted butter
  9. 1 Q heavy cream
  10. 1 tsp kosher salt
  11. 2 dill pickles
  12. 2 tbsp minced red onion
  13. 1 tbsp mayo
  14. 1 tsp ketchup
  15. 1/4 tsp sugar
  16. extra salt and butter
For the Mac
  1. Bring a pot of water to a boil.
  2. Melt butter in large, deep saucepan, then add heavy cream.
  3. Combine and reduce mixture by half over medium heat. (could take 20-30 min or so)
  4. Once reduced, add fontina, goat cheese, parm and salt, and mix to combine.
  5. Cook pasta till just under al dente (add a hand full of salt to water prior to cooking--trust the amount, it's a lot of water)
  6. Add pasta to cheese sauce to finish cooking. You want the pasta to hold its shape and still have a chew to it, without being crunchy.
For the Pickle Relish
  1. Julienne the dill pickles.
  2. Add minced red onion, mayo, ketchup, sugar, and mix to combine.
For the Burger
  1. Form 8 thin burger patties, making them a little wider than the buns. They will shrink as they cook.
  2. Liberally salt both sides with kosher salt.
  3. Sear in a pan or on a flattop for a couple minutes per side, until a nice sear has formed and the burgers are cooked to about medium.
  4. When the burgers are almost done, add the slices of white American cheese.
For the Buns
  1. Slice the Kaiser rolls so that the top is larger than the bottom.
  2. Hollow out the inside of the top bun.
  3. Butter both sides and toast on the flattop.
For Assembly
  1. Add two burger patties on top of bottom bun.
  2. Top with as much pickle relish as you'd like.
  3. Fill the top bun with mac and cheese. If you want to get crazy (like me), you can add more mac and cheese to the top of the burgers before adding the top bun as well.
  4. Carefully flip the top bun over on top of the burger.
  1. FYI: This recipe is for more mac and cheese than you'll need for the burgers. Because you should also eat mac and cheese as a side, and also for breakfast, lunch and dinner. You're welcome.
